This innovative and interdisciplinary “Food Quality and Safety” master’s programme offers you a life sciences-oriented focus complemented by an equal share of legal and economic courses. This course is suitable for students with a Bachelor‘s degree, e.g. in natural, nutrition or health sciences.
Vollzeitstudium
The core competencies taught in the programme will enable our graduating Master students to understand and solve problems in the field of food quality and safety from an integrative, cross-disciplinary perspective. To this end, the course is interdisciplinary in design, combining a life science focus (e.g. biology of crop plants and animals, food microbiology, biochemistry and physiology of nutrition, food chemistry and toxicology) with an approximately equal share of legal, social and economic studies. The modules of the master’s curriculum comprise Biology and Biochemistry of Food, Human Biology, Food Chemistry, Data Science/Bioinformatics/Statistics, Food Law, Food Trade Law, Safety and Risk Management Law, Quality Management, Food Supply Chain Management, and Science Communication.
Requirements for the admission to the study programme are:
- a Bachelor's degree with a final grade of 2.5 ("gut") or better in the bachelor programmes Biology, Biochemistry, Food Sciences or a comparable degree in the field of Life Sciences;
- the successful completion of an aptitude test;
- a language certificate ENGLISH level C1 of the Common European Framework of Reference for Languages (CEFR)
- a language certificate GERMAN level A1 of the CEFR; can be obtained during the first year of the programme.
For applicants with the German Abitur: The language level B2+/C1 or better is accepted as proof of your English language skills. This is usually achieved if you have studied English from the 5th grade until the Abitur.

Under qualified supervision, our students learn modern laboratory techniques and analytical methods in laboratories specially equipped for teaching which they can then apply to their own exciting experiments.

The University’s Faculty of Life Sciences: Food, Nutrition and Health is located in the beautiful town of Kulmbach, home not only to several internationally operating food companies but also to the Max Rubner Institute, the Bavarian Control Authority for Food Safety and Veterinary Medicine, the State Technical College for Food Technology, the Competence Centre for Nutrition, and the Kulmbach Clinical Centre. Because of this, students get involved in various research projects associated with the Faculty's teaching activities.

Ich bin derzeit in meinem vierten Semester und schreibe meine Masterarbeit. Die Kurse sind schön und abwechslungsreich und die Dozenten sind immer da, um zu helfen. Der einzige negative Aspekt ist, dass es sich um ein relativ neues Programm handelt, so dass es noch einige Anpassungen in Bezug auf die Organisation der Kurse und die genaue inhaltliche Bestimmung benötigt.
